Note: You should never cook tomatoes in a cast iron pan - it will ruin the finish.

That looks outstanding. I couldn't fit poutine into my diet plan this year, but I made it last year, though yours looks lots better. I love the idea of using Gardein beef tips, and of course daiya is a must. Mmm! Hooray for Canada Day!

Yeh the class and regional metrics matter for sure. I guess my main concern or question is that almost every other religious group, and a lot of people without any religious tendencies, follow some sort of dietary guidelines but Christians seem to act like those don't matter. Can't wrap my head around that. You're exactly right in your second statement.

Per usual, I reflexively wonder aloud how the observed correlation between faith and fat - which I've seen as well - maps to class metrics.

But that's not really the point, is it? The faith angle is neat. Surely, God's gift to us of dominion over the animal kingdom doesn't include a carte blanche to spoil and raze its and our dignity in a swatch of ill nutrition.

Full disclosure: Still haven't kicked dairy, fully a secular humanist.

1) Methodists don't do dietary restrictions any more than Episcopalians, Presbyterians, and Lutherans do. Some in the mainline choose a dietary restriction as part of their lenten devotional practices, but not all. Had to pipe up as Eikon's sole mainliner. 2)My Christian faith has been a huge part in my changing the way I eat.

Nice post.

Don, your words are well put and though provoking. I love you and miss you. I do wish we would have used our time at HU to work on a zine instead of eating waffles too, but what's done is done- and I think your article is a good start to making a difference somewhere, somehow. Kudos and kablam :)

I HAD to drop Christian Home after the first session. That class would've been enough to push me over the edge.

Everyone everyone says that Joe Brumfield is a nice guy, and what I remember of him politely helping me drop his class in favor of the Daniel / Revelations Bible class was very nice as well.
